Sweet Potato Pancakes

on:I can honestly tell you that I was VERY apprehensive to try these pancakes. I can’t stand sweet potatoes (in any form) and since this recipe packs one-half cup per 10 pancakes, I thought for sure that was all I would taste! I am thrilled to say, I was wrong!! Not only are they delicious, but they may just be the best pancakes I have ever had!!! And I don’t think that I’ll revert back to the ‘old-fashioned’ way! 🙂 Here’s how I make them:
Biscuit Pizzas

on:I don’t know about your house, but we are fans of pizza in just about any form! In the past, I used to buy mini pizza shells, but the store I had been buying them from recently stopped carrying them (plus they were 8 for $2 – not a bad price, but I found cheaper way!) I then started using crescent rolls, putting the toppings inside and rolling them up. This weekend I bought biscuits and was presently surprised at how they turned out!! Plus, I got 40 biscuits for about $1.98!!!
Biscuit Pizzas
Ingredients:
Biscuits
Cheese
Pepperoni / other toppings, if desired
Pizza Sauce
Directions:
1. Preheat oven to 400 degrees.
2. Flatten each biscuit and set on baking sheet. Once you have flattened them all, start over and do them each a second time (this will give you a bigger pizza crust)
3. Add cheese (we use a mozzarella and provolone blend) and toppings to each biscuit.
4. Bake for 10-14 minutes until the crust is golden brown and the cheese is all melty and gooey!
Serve with pizza sauce to dip.
Notes: I have also folded the biscuits to make miniature calzones! Of course, your could vary this any way you like! Put the sauce on the biscuit before the cheese and toppings. Use ranch dressing as the sauce and add chicken and bacon! The possibilities are endless!! 🙂
